Hello, foodies! Today, I’m excited to share with you a dish that combines the sweetness of mango with the creaminess of coconut milk in a unique curry recipe. This creation was inspired by a recent trip to a tropical island where I had the most delicious mango and coconut dessert. I wanted to recreate those flavors in a savory dish, and thus, this Exotic Mango Coconut Curry was born!

Ingredients:

  • 1 ripe mango, diced
  • 400ml coconut milk
  • 300g chicken breast, cubed
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • to taste
  • 2 tbsp coconut oil
  • fresh cilantro for garnish

Kitchen Tools:

  • wooden spoon
  • measuring spoons

To start, heat coconut oil in a large skillet over medium heat. Add the chopped onion, minced garlic, grated ginger, and sliced red bell pepper. Sauté until the vegetables are softened, about 5 minutes.

Next, add the cubed chicken breast to the skillet and cook until browned on all sides. Sprinkle the curry powder, turmeric, and salt over the chicken and vegetables, stirring to coat everything evenly.

Pour in the coconut milk and diced mango, stirring to combine. Bring the mixture to a simmer, then reduce the heat and let it simmer gently for about 15-20 minutes, or until the chicken is cooked through and the flavors have melded together.

Taste and adjust seasoning as needed. Serve the Exotic Mango Coconut Curry hot, garnished with fresh cilantro. This dish pairs perfectly with steamed rice or naan bread.

The approximate total weight of the cooked dish is 1100g, making about 4 servings. Each serving is approximately 275g, with an estimated calorie count of 350 per serving.

One clever tip to make this dish even more flavorful is to add a squeeze of fresh lime juice before serving. The acidity of the lime will brighten up the flavors of the curry and enhance the sweetness of the mango.
