Summer is in full swing, and I am excited to share a unique and refreshing dish with you today. This recipe was inspired by my recent trip to a tropical island, where I had the most incredible mango salsa that left me craving more. Today, I’ll be showing you how to make a delicious Grilled Shrimp with Mango Salsa that is perfect for a hot summer day.

Ingredients

  • 400g shrimp
  • 1 large mango
  • 1 red bell pepper
  • 1/2 red onion
  • 1 jalapeño
  • 1 lime
  • Handful of fresh cilantro
  • 2 tbsp olive oil
  • Salt and pepper to taste

Preparation

Start by preheating your grill to medium-high heat. In a mixing bowl, combine the diced mango, red bell pepper, red onion, jalapeño, lime juice, fresh cilantro, olive oil, salt, and pepper. Mix well to combine all the flavors and set aside.

Next, season the shrimp with salt and pepper. Place the shrimp on the grill and cook for 2-3 minutes per side, until they are pink and opaque.

Once the shrimp is cooked, remove them from the grill and place them on a serving platter. Top the grilled shrimp with the mango salsa mixture, ensuring each shrimp is generously covered with the salsa.

Serve the Grilled Shrimp with Mango Salsa immediately and enjoy the burst of tropical flavors in every bite.
