The vibrant colors and flavors of the local cuisine sparked my creativity, and I couldn’t wait to get back in my kitchen and experiment with some unusual ingredient combinations. The result is a dish that perfectly captures the essence of summer with a twist you won’t see coming.

For this recipe, you’ll need the following ingredients:

  • 1 ripe mango (peeled and cubed)
  • a handful of fresh basil leaves
  • 200ml of coconut milk
  • 150g of cooked quinoa
  • 200g of shrimp (peeled and deveined)
  • juice of 1 lime
  • 1 tsp of chili flakes
  • to taste

Be sure to have the following kitchen tools on hand:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • medium saucepan

Start by heating a large skillet over medium heat and adding the shrimp. Cook until pink and opaque, then set aside. In a medium saucepan, heat the coconut milk over low heat, stirring occasionally. Once warmed through, add the cooked quinoa and stir to combine.

Next, add the mango, lime juice, chili flakes, salt, and pepper to the quinoa mixture. Stir gently to incorporate the flavors. Tear the basil leaves into small pieces and add them to the pan, mixing everything together.

Finally, add the cooked shrimp to the quinoa mixture, stirring gently to combine. Allow everything to heat through for a few more minutes, then remove from the heat. Serve the dish hot, garnished with additional basil leaves for a pop of color and freshness.
