Ingredients:

  • 300g chicken breast, thinly sliced
  • 1 ripe mango, peeled and diced
  • 200ml coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 lime, juiced
  • 1 tbsp sugar
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • Handful of fresh basil leaves
  • Salt and pepper to taste

To start, heat the vegetable oil in a wok over medium-high heat. Add the minced garlic and red curry paste, and stir-fry for a minute until fragrant. Add the sliced chicken breast and cook until browned on all sides.

Next, pour in the coconut milk, fish sauce, lime juice, and sugar. Stir well to combine and bring to a simmer. Let it cook for about 5 minutes until the chicken is cooked through and the sauce has thickened slightly.

Once the chicken is cooked, add the diced mango and fresh basil leaves. Stir gently to combine and let it cook for another 2-3 minutes until the mango is heated through.

Season with salt and pepper to taste. Serve the mango coconut chicken stir-fry hot over steamed rice or noodles. Enjoy the perfect balance of sweet, savory, and creamy flavors in every bite!
