Today’s Unique Dish: Pineapple Teriyaki Chicken Stir-Fry

I’m excited to share one of my all-time favorite dishes with you today: Pineapple Teriyaki Chicken Stir-Fry. This dish always reminds me of summer days spent with friends and family, enjoying the sweet and savory flavors that come together in perfect harmony.

Ingredients:

  • boneless, skinless chicken breast (300g)
  • fresh pineapple chunks (200g)
  • bell peppers, assorted colors (150g)
  • snow peas (100g)
  • green onions (50g)
  • teriyaki sauce (100ml)
  • soy sauce (50ml)
  • fresh ginger, minced (10g)
  • garlic, minced (2 cloves)
  • cornstarch (15g)
  • sesame oil (15ml)
  • cooked rice, for serving

Kitchen Tools:

  • spatula
  • whisk

Start by heating the wok over medium-high heat and adding a splash of sesame oil. Add the sliced chicken breasts and cook until browned and cooked through. Remove the chicken from the wok and set it aside.

In the same wok, add a bit more sesame oil and toss in the minced garlic and ginger. Stir-fry for a minute until fragrant. Add in the sliced bell peppers, snow peas, and pineapple chunks. Cook until the vegetables are slightly tender but still crisp.

In a small bowl, whisk together the teriyaki sauce, soy sauce, and cornstarch. Pour this mixture into the wok and stir well to combine. Bring the sauce to a simmer, then add the cooked chicken back to the wok. Stir everything together until the sauce has thickened and coated all the ingredients.

Serve the Pineapple Teriyaki Chicken Stir-Fry over a bed of fluffy rice and garnish with sliced green onions. Enjoy this delightful dish full of bright colors and bold flavors!
