Today’s Recipe: Curried Pineapple Chicken

I’m excited to share a new and unique recipe with you today that combines the sweet tropical flavor of pineapple with the warm spices of curry. This dish is perfect for cozy nights at home or for entertaining guests with something a little out of the ordinary.

Ingredients:

  • 400g chicken breast, diced
  • 250g pineapple chunks
  • 200ml coconut milk
  • 2 tbsp curry powder
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 onion, chopped
  • 1 red bell pepper, sliced

  • 2 tbsp olive oil

To start, heat the olive oil in a skillet over medium heat. Add the chopped onion, garlic, and ginger, and sauté until fragrant. Next, add the diced chicken breast and cook until browned on all sides.

Once the chicken is cooked through, add the sliced red bell pepper and pineapple chunks to the skillet. Stir in the curry powder, salt, and pepper, coating the chicken and vegetables evenly. Let the mixture simmer for a few minutes to allow the flavors to meld together.

Pour in the coconut milk and bring the mixture to a gentle simmer. Allow it to cook for another 10-15 minutes, stirring occasionally, until the sauce has thickened slightly and the chicken is fully cooked.

Serve the curried pineapple chicken over steamed rice or quinoa, garnished with fresh cilantro or chopped nuts for added crunch.

The approximate total weight of the cooked dish is 900g, with 4 servings at 225g each. Each serving is approximately 350 calories.

A unique tip for this dish is to add a splash of lime juice before serving to brighten up the flavors and add a refreshing zing to the dish.
