Today’s Special: Spicy Mango Coconut Curry

As the temperatures rise and summer produce starts flooding the markets, I find myself craving refreshing and exotic flavors. Today, I’m excited to share with you my recipe for Spicy Mango Coconut Curry. This dish is a perfect balance of sweetness from ripe mangoes, creaminess from coconut milk, and a kick of spice from jalapeños. It’s a unique twist on a classic curry that will transport you to a tropical paradise with every bite.

Ingredients:

  • 3 ripe mangoes (peeled and diced)
  • 400ml coconut milk
  • 2 jalapeños (sliced)
  • 1 red bell pepper (sliced)
  • 1 onion (chopped)
  • 4 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 2 tbsp curry powder
  • 500ml vegetable broth
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon
  • blender

To start, heat some oil in a large pot over medium heat. Add the chopped onion, garlic, and grated ginger, and sauté until softened and fragrant. Sprinkle in the curry powder and stir to coat the vegetables.

Next, add the sliced jalapeños, red bell pepper, and diced mangoes to the pot. Let everything cook together for a few minutes until the vegetables begin to soften. Pour in the coconut milk and vegetable broth, and bring the mixture to a simmer.

Once the curry is simmering, use a ladle to transfer half of the mixture to a blender. Blend until smooth, then pour it back into the pot. This will help thicken the curry and create a rich, velvety texture.

Let the curry simmer gently for about 15-20 minutes, allowing the flavors to meld together. Season with salt and pepper to taste. If you prefer a spicier curry, you can add more sliced jalapeños at this point.

Serve the Spicy Mango Coconut Curry hot, garnished with fresh cilantro. This dish pairs beautifully with steamed rice or naan bread.

One unique tip for this recipe is to add a squeeze of lime juice right before serving. The acidity of the lime cuts through the richness of the coconut milk and enhances the flavors of the curry.

I hope you enjoy making this Spicy Mango Coconut Curry as much as I do. Feel free to play around with the ingredients and spices to make it your own. Happy cooking!
