It’s a unique twist on a classic curry that will transport you to a tropical paradise with every bite.

Ingredients:

  • 3 ripe mangoes (peeled and diced)
  • 400ml coconut milk
  • 2 jalapeños (sliced)
  • 1 red bell pepper (sliced)
  • 1 onion (chopped)
  • 4 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 2 tbsp curry powder
  • 500ml vegetable broth
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Next, add the sliced jalapeños, red bell pepper, and diced mangoes to the pot. Let everything cook together for a few minutes until the vegetables begin to soften. Pour in the coconut milk and vegetable broth, and bring the mixture to a simmer.

Once the curry is simmering, use a ladle to transfer half of the mixture to a blender. Blend until smooth, then pour it back into the pot. This will help thicken the curry and create a rich, velvety texture.

Let the curry simmer gently for about 15-20 minutes, allowing the flavors to meld together. Season with salt and pepper to taste. If you prefer a spicier curry, you can add more sliced jalapeños at this point.

Serve the Spicy Mango Coconut Curry hot, garnished with fresh cilantro. This dish pairs beautifully with steamed rice or naan bread.
