This Spicy Mango Coconut Curry Rice Bowl is a unique blend of tropical sweetness from mangoes, creamy coconut milk, and a kick of spicy curry. Ingredients:

  • Basmati rice (200g)
  • Mango, diced (1 medium)
  • Coconut milk (400ml)
  • Curry powder (2 tbsp)
  • Chili flakes (1 tsp)
  • Turmeric (1 tsp)
  • Fresh ginger, minced (1 tbsp)
  • Garlic, minced (2 cloves)
  • Onion, diced (1 medium)
  • Red bell pepper, sliced (1)
  • Lime, juiced (1)

Once the vegetables are cooked, add the diced mango to the saucepan along with the cooked basmati rice. Stir in the lime juice and mix everything together until well combined. Season with salt and pepper to taste.
