  • 1-inch piece of ginger, grated
  • 1 red chili, sliced
  • 1 red bell pepper, sliced
  • Salt and pepper to taste

Next, add the shrimp to the skillet and cook until they turn pink and opaque. Pour in the coconut milk and bring the mixture to a simmer. Let it cook for about 5 minutes until the flavors meld together.

Stir in the diced mango and lime juice, and season with salt and pepper to taste. Let the curry simmer for another couple of minutes to allow the mango to soften slightly.
