As the weather starts getting colder, I find myself craving warm, comforting dishes with a tropical twist. Today, I’m excited to share with you my recipe for Spicy Mango Coconut Shrimp Stir-Fry. This dish combines the sweetness of ripe mangoes with the creamy richness of coconut milk and the bold flavors of spicy shrimp. It’s a perfect balance of sweet, savory, and spicy that will transport you to a sunny beach in the tropics with every bite.

Ingredients:

  • 400g raw shrimp (peeled and deveined)
  • 1 ripe mango (diced)
  • 200ml coconut milk
  • 1 red chili (sliced)
  • 3 cloves garlic (minced)
  • 1-inch piece of ginger (minced)
  • 50ml soy sauce
  • 2 tbsp lime juice
  • 100g glass noodles
  • Fresh cilantro for garnish

Kitchen Tools:

  • wooden spoon
  • grater

Start by heating your wok over medium heat and adding a splash of oil. Once the oil is hot, add the minced garlic, ginger, and sliced red chili. Sauté for a minute until fragrant, then add the raw shrimp to the wok. Cook the shrimp until pink and cooked through, then remove them from the wok and set aside.

In the same wok, add the diced mango and coconut milk. Let them simmer together until the mango is soft and the flavors have melded, about 5 minutes. Add the soy sauce and lime juice to the wok, stirring well to combine.

Meanwhile, cook the glass noodles according to the package instructions until they are al dente. Drain the noodles and add them to the wok with the mango-coconut sauce. Toss everything together until the noodles are well coated in the sauce.

Return the cooked shrimp to the wok, stirring gently to incorporate them into the stir-fry. Cook for another minute to heat everything through. Taste and adjust the seasoning with more soy sauce or lime juice if needed.

Serve the Spicy Mango Coconut Shrimp Stir-Fry hot, garnished with fresh cilantro. This dish serves 4 people and has a total weight of approximately 1000g. Each serving is about 250g and contains approximately 350 calories.

One unique tip for this dish is to sprinkle some toasted coconut flakes over the top for an extra crunch and burst of coconut flavor. They add a wonderful texture contrast to the soft noodles and juicy shrimp.
