These tacos are a fusion of sweet and spicy, with a tropical twist that will transport you to a sunny beach with every bite.

To make these delicious Spicy Mango Pulled Pork Tacos, you’ll need the following ingredients:

  • 700g pork shoulder, trimmed and cut into chunks
  • 1 ripe mango, diced
  • 1 jalapeno, finely chopped
  • 1/2 red onion, diced
  • 3 cloves of garlic, minced
  • 2 chipotle peppers in adobo sauce, chopped
  • Juice of 1 lime
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 ripe avocado, sliced
  • Fresh cilantro leaves, for garnish

For this recipe, you’ll need the following kitchen tools:

  • slow cooker
  • skillet
  • cutting board
  • knife
  • tongs

Start by seasoning the pork shoulder with salt, pepper, cumin, coriander, and cinnamon. In a skillet over medium-high heat, brown the pork on all sides for about 5 minutes. Transfer the pork to the slow cooker.

In the same skillet, sauté the red onion, garlic, jalapeno, and chipotle peppers until fragrant. Add the mixture to the slow cooker with the pork. Pour in the lime juice, brown sugar, and diced mango. Stir to combine all the ingredients.

Cover the slow cooker and cook on low for 8 hours, or until the pork is tender and easily pulled apart with a fork. Once cooked, use tongs to shred the pork in the slow cooker and mix it in with the mango mixture.

To assemble the tacos, warm the tortillas in a dry skillet for about 30 seconds on each side. Fill each tortilla with the spicy mango pulled pork mixture and top with sliced avocado and fresh cilantro.
