Hey everyone! Today I’m excited to share with you a recipe that always brings a burst of sunshine to my day – my Spicy Mango Shrimp Tacos. This dish is perfect for those warm summer nights or any time you’re craving a tropical twist on a classic favorite. The combination of sweet mango, spicy shrimp, and fresh toppings is sure to impress your taste buds.

Ingredients:

  • 300g shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 1 ripe avocado, sliced
  • 100g red cabbage, thinly sliced
  • 1 lime, juiced
  • 1 jalapeno, seeded and diced
  • Handful of fresh cilantro, chopped
  • 8 small corn tortillas
  • Spices: cumin, chili powder, garlic powder, salt, pepper

Start by seasoning your shrimp with a mix of cumin, chili powder, garlic powder, salt, and pepper in a bowl. Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 2-3 minutes per side.

While the shrimp are cooking, combine the diced mango, sliced avocado, red cabbage, jalapeno, and chopped cilantro in a separate bowl. Squeeze the lime juice over the mixture and toss to combine.

Warm your corn tortillas in the skillet for about 30 seconds per side, then assemble your tacos by layering the shrimp on the tortillas and topping with the mango-avocado salsa. Serve with extra lime wedges on the side for squeezing.
