Culinary Delight: Spicy Mango Coconut Shrimp

Today, I’m excited to share with you a recipe that perfectly combines sweet, spicy, and savory flavors — my Spicy Mango Coconut Shrimp. This dish is inspired by the vibrant colors and bold flavors of tropical cuisine, making it a perfect choice for a summer dinner party or a cozy night in. Let’s get started!

Ingredients:

  • 400g shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 200ml coconut milk
  • 1 tbsp chili flakes
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • A handful of fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Kitchen Tools:

Start by heating a skillet over medium heat and adding the minced garlic and grated ginger. Sauté for a minute until fragrant, then add the shrimp to the skillet. Cook the shrimp until they turn pink and opaque, then remove them from the skillet and set them aside.

In the same skillet, pour in the coconut milk and diced mango. Let them simmer together until the mango softens and the mixture thickens slightly. Add the chili flakes, lime juice, and salt and pepper to taste. Stir well to combine.

Once the sauce has thickened to your liking, add the cooked shrimp back to the skillet. Stir gently to coat the shrimp in the mango coconut sauce. Let everything simmer together for a few more minutes to allow the flavors to meld.

Before serving, sprinkle the chopped cilantro over the dish for a pop of fresh flavor. You can serve this Spicy Mango Coconut Shrimp over cooked rice or with a side of steamed vegetables for a complete meal.
