Today, I am excited to share with you my latest culinary creation: a unique twist on a classic comfort food that will tantalize your taste buds and leave you craving more. As the seasons change and cooler weather approaches, I find myself drawn to hearty, warming dishes that bring a sense of nostalgia and coziness to the table. This dish combines unexpected flavors and ingredients to create a truly memorable dining experience.

Ingredients:

  • sweet potatoes
  • brussel sprouts
  • quinoa
  • pomegranate
  • feta cheese
  • maple syrup
  • balsamic vinegar
  • cumin
  • paprika
  • salt and pepper

I start by preheating my oven to 400°F (200°C) and preparing a baking sheet with parchment paper. Next, I peel and dice the sweet potatoes into bite-sized cubes and trim and halve the brussel sprouts. I toss them in a bowl with a drizzle of olive oil, cumin, paprika, salt, and pepper before spreading them out on the baking sheet in an even layer. I roast them in the oven for about 25-30 minutes until they are tender and slightly caramelized.

While the veggies are roasting, I cook the quinoa according to the package instructions in a saucepan. Once cooked, I fluff it with a fork and set it aside to cool slightly.

In a small bowl, I whisk together the maple syrup and balsamic vinegar to create a tangy-sweet dressing. I pour this over the cooked quinoa, mixing it in gently to coat each grain. I then add in the roasted sweet potatoes and brussel sprouts, crumbled feta cheese, and arils from the pomegranate.

To finish, I give everything a final toss to combine all the flavors and textures. This dish is best served warm, allowing the creamy feta, juicy pomegranate arils, and roasted veggies to meld together harmoniously.
