Ingredients:

  • 500g carrots, peeled and chopped
  • 500g sweet potatoes, peeled and chopped
  • 300g parsnips, peeled and chopped
  • 1 large red onion, sliced
  • 3 tbsp miso paste
  • 3 tbsp maple syrup
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Start by preheating your oven to 400°F (200°C). In a mixing bowl, whisk together the miso paste, maple syrup, olive oil, salt, and black pepper until well combined. Spread the vegetables out in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the vegetables are tender and caramelized, stirring halfway through the cooking time.
