Today, I’m excited to share a unique and flavorful recipe for miso glazed eggplant. This dish is perfect for a light lunch or dinner option with a delicious umami kick. Let’s dive into the details to create this mouthwatering dish!

Ingredients:

  • 2 small eggplants
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 inch piece of ginger, grated
  • Sesame seeds and chopped green onions for garnish

I start by preheating the oven to 400°F (200°C) and lining a baking sheet with parchment paper. I then slice the eggplants in half lengthwise and score the flesh in a crisscross pattern. In a mixing bowl, I combine the miso paste, mirin, soy sauce, honey, sesame oil, garlic, and ginger.

Next, I brush the miso mixture generously over the scored side of each eggplant half. I place the eggplants on the prepared baking sheet, scored side up, and bake for about 25-30 minutes or until the eggplant is tender and the glaze is caramelized.

Once the eggplant is roasted to perfection, I sprinkle sesame seeds and chopped green onions on top for a pop of color and crunch. This dish is best served hot, straight from the oven.
