I love how the sweetness of the miso glaze complements the earthy flavors of the eggplant, making it a truly unforgettable dish.

Ingredients:

  • 1 large eggplant (approximately 400g)
  • 3 tablespoons miso paste
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 tablespoon toasted sesame seeds (for garnish)

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Cut the eggplant into thick slices and place them on the prepared baking sheet. In a mixing bowl, whisk together the miso paste, mirin, soy sauce, sesame oil, and brown sugar until well combined.

Using a brush, generously coat each eggplant slice with the miso glaze, making sure to cover both sides. Place the baking sheet in the oven and roast the eggplant for about 20-25 minutes, or until the slices are caramelized and tender, flipping them halfway through the cooking time.
