Discovering a Hidden Gem: Grilled Mango Salad

As the summer heat starts to settle in, I find myself constantly craving light and refreshing dishes that won’t weigh me down. Today, I am excited to share with you a recipe that combines the sweetness of mangoes with the charred flavor of grilled veggies for a unique and healthy salad experience.

For this Grilled Mango Salad, you will need the following ingredients:

  • 1 ripe mango (200g), peeled and diced
  • 1 red bell pepper (150g), sliced
  • 1 yellow bell pepper (150g), sliced
  • 1 red onion (100g), sliced
  • 2 cups of fresh spinach leaves (50g)
  • 1/4 cup of pumpkin seeds (30g), toasted
  • 1/2 cup of crumbled feta cheese (60g)
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • grill pan
  • mixing bowl
  • spatula
  • tongs

Start by preheating your grill pan over medium heat. Toss the sliced red and yellow bell peppers and red onion with a tablespoon of olive oil, salt, and pepper. Grill the vegetables until they are tender and slightly charred, about 8-10 minutes. Transfer them to a mixing bowl and let them cool slightly.

In the same grill pan, add the diced mango and grill for 2-3 minutes on each side until caramelized. Once done, add the grilled mango to the bowl with the veggies.

Next, add the fresh spinach leaves, toasted pumpkin seeds, and crumbled feta cheese to the bowl. Drizzle the remaining olive oil and balsamic vinegar over the salad, and toss everything together gently to combine. Season with additional salt and pepper to taste.

The total weight of the cooked Grilled Mango Salad is approximately 700g, with 4 servings. Each serving weighs around 175g, and provides roughly 250 calories.

A unique tip for this salad is to sprinkle some chili flakes over the top before serving to add a spicy kick to the sweet and savory flavors.
