Today, I’m excited to share a quirky and delicious recipe that I recently created for a cozy Sunday brunch. As the weather gets colder, I love experimenting with warm and comforting dishes that bring a little bit of sunshine to the table. This dish is a fusion of flavors and textures that will surely surprise and delight your taste buds.

Ingredients:

  • bacon strips (200g)
  • 2 large sweet potatoes
  • 1 red bell pepper
  • 1 onion
  • 4 eggs
  • feta cheese (100g)
  • Fresh parsley
  • Salt and pepper

Kitchen Tools:

  • baking sheet
  • knife
  • cutting board
  • grater

I start by preheating the oven to 400°F (200°C). While the oven is warming up, I peel and dice the sweet potatoes into small cubes. Then, I chop the red bell pepper and onion into similar-sized pieces. Next, I lay out the bacon strips on a baking sheet and bake them in the oven until they are crispy.

In a skillet over medium heat, I cook the diced sweet potatoes, red bell pepper, and onion until they are tender and slightly caramelized. Once the bacon is done, I crumble it and add it to the skillet mixture, stirring well to combine.

I crack the eggs into the skillet, one at a time, allowing them to cook slightly before gently stirring to create a scrambled egg and vegetable medley. I crumble the feta cheese over the top and let it melt slightly into the dish. To finish, I sprinkle fresh parsley, salt, and pepper for added flavor.

Serving:

This unique brunch dish weighs approximately 1000g after cooking and serves four hungry brunch-goers. Each serving is about 250g and has an estimated calorie count of 350 calories.

One clever tip for this recipe is to sprinkle a bit of smoked paprika over the top before serving. It adds a wonderful depth of flavor and a touch of smokiness that elevates the dish to a whole new level.
