Greetings, foodies! Today, I’m excited to share a unique and flavorful recipe that I stumbled upon during a recent kitchen experiment. The combination of sweet potato and curry spices may sound unusual for sushi, but trust me, it’s a delicious twist that will leave your taste buds craving more. Let’s dive into this inventive dish!

Ingredients:

  • sushi rice (250g)
  • water (300ml)
  • sweet potato, peeled and thinly sliced (1 medium)
  • curry powder (1 tsp)
  • salt (1/2 tsp)
  • rice vinegar (3 tbsp)
  • sugar (1 tbsp)
  • nori sheets (4 sheets)
  • sesame seeds (1 tbsp)

Kitchen Tools:

  • rice cooker
  • baking sheet
  • small bowl
  • sushi mat

To start, rinse the sushi rice under cold water until the water runs clear. Then, cook the rice in a rice cooker with the water according to the rice cooker’s instructions.

Meanwhile, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the thinly sliced sweet potato on the baking sheet and sprinkle with curry powder and salt. Roast in the oven for about 15-20 minutes until the sweet potatoes are tender.

In a small bowl, mix the rice vinegar and sugar until the sugar dissolves. Once the rice is cooked, transfer it to a large bowl and drizzle the vinegar mixture over it. Gently fold the rice with a rice paddle to mix in the vinegar without smashing the grains.

Lay a sheet of nori onto a sushi mat, shiny side down. Wet your hands with water to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving a small border along one edge. Place a few slices of the roasted sweet potato along the center of the rice and sprinkle with sesame seeds.

Roll the sushi tightly using the mat, sealing the edge with a bit of water. Use a sharp knife to slice the roll into bite-sized pieces.

Unique Tip:

For an extra pop of flavor, try dipping your sushi in a mixture of soy sauce and a splash of lemon juice. The tangy citrus will complement the sweetness of the sweet potato and the warmth of the curry spices perfectly.

Once you’ve made a few rolls, sit back and admire your handiwork. The total weight of this dish is approximately 700g, making about 4 servings at 175g each. Each serving is roughly 200 calories.
