This Raspberry Basil Sorbet is the perfect combination of sweet and herbaceous notes that will leave you wanting more.

For this recipe, you will need:

  • 500g fresh raspberries
  • 30g fresh basil
  • 200g granulated sugar
  • 250ml water
  • 30ml fresh lemon juice

Grab these essential kitchen tools:

  • blender
  • fine mesh strainer
  • saucepan
  • ice cream maker

To start, combine the sugar and water in a saucepan over medium heat, stirring until the sugar has fully dissolved. Remove from heat and let it cool to room temperature.

Meanwhile, rinse the raspberries and basil. In a blender, combine the raspberries, basil leaves, and lemon juice. Blend until smooth, then strain the mixture through a fine mesh strainer to remove any seeds or pulp.

Once the sugar syrup has cooled, mix it with the raspberry basil puree. Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions until it reaches a sorbet-like consistency.

Transfer the sorbet to a container and freeze for at least 2 hours to firm up before serving.
