This recipe was inspired by a rainy morning where I was craving something comforting and flavorful. The combination of sweet bananas with savory ingredients creates a delightful balance that will surely surprise your taste buds.

Ingredients:

  • 3 large ripe bananas (mashed)
  • 1/4 cup bacon bits
  • 2 green onions (chopped)
  • 1/2 cup cheddar cheese (shredded)
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 egg
  • 2 tablespoons butter (for cooking)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Kitchen Tools:

To begin, in a mixing bowl, combine the mashed bananas, bacon bits, green onions, cheddar cheese, flour, baking powder, milk, egg, salt, and black pepper. Mix everything together until just combined, being careful not to overmix.

Next, heat a frying pan over medium heat and add a small amount of butter. Once the butter has melted, pour a ladleful of the pancake batter into the pan. Cook for 2-3 minutes on each side, or until golden brown and cooked through.

Repeat this process with the remaining batter, adding more butter to the pan as needed.

Once all the pancakes are cooked, serve them warm with a dollop of sour cream or a drizzle of maple syrup for an extra flavor boost.
