Unexpectedly Delicious: Savory Beetroot Cheesecake Recipe

Baking a Savory Beetroot Cheesecake

Today, I am excited to share a unique and savory recipe that combines the earthy sweetness of beets with the creamy richness of a cheesecake. This dish is perfect for a special dinner party or any occasion where you want to impress your guests with something a little unexpected.

Ingredients:

  • 600g beets, peeled and grated
  • 250g cream cheese
  • 150g goat cheese
  • 3 eggs
  • 200ml heavy cream
  • 50g butter, melted
  • 2 cloves of garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh herbs (such as parsley or chives)

Kitchen Tools:

  • saute pan

I start by preheating the oven to 350°F (180°C) and greasing a 9-inch springform pan. In a saute pan, I cook the grated beets with the minced garlic until tender and most of the liquid has evaporated. This should take about 10 minutes over medium heat. Set aside to cool slightly.

In a mixing bowl, combine the cream cheese, goat cheese, eggs, heavy cream, melted butter, salt, and black pepper. Mix until smooth and well combined. Fold in the cooked beets and fresh herbs, being careful not to overmix.

Pour the mixture into the prepared springform pan and smooth out the top. Bake in the preheated oven for 40-45 minutes, or until the cheesecake is set and slightly golden on top. Let it cool in the pan for at least 30 minutes before removing the sides.

Once cooled, slice the beetroot cheesecake into wedges and serve. This savory dish pairs beautifully with a simple green salad or roasted vegetables.

The approximate total weight of the cooked dish is 1200g, with 8 servings at 150g each. Each serving is approximately 320 calories.

One unusual tip for this recipe is to sprinkle some crumbled bacon on top of the cheesecake before serving. The salty crunch of the bacon adds a wonderful contrast to the creamy cheesecake.
