Today, I’m thrilled to share a recipe that combines unexpected ingredients to create a truly unforgettable taste experience. This dish is perfect for a cozy night in or a special gathering with loved ones.

Ingredients:

  • purple sweet potatoes (300g)
  • coconut milk (200ml)
  • curry powder (1 tbsp)
  • cinnamon (1 tsp)
  • dried cranberries (50g)
  • pistachios (50g)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • potato masher
  • oven

To start, preheat your oven to 200°C (400°F). Wash the purple sweet potatoes and pierce them all over with a fork. Place them on a baking tray and roast in the oven for about 45-60 minutes, or until they are soft and tender.

Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Peel off the skin and place the flesh in a mixing bowl. Using a potato masher, mash the sweet potatoes until smooth and creamy.

Next, pour in the coconut milk and mix it into the mashed sweet potatoes until well combined. Add the curry powder and cinnamon, stirring until the spices are evenly distributed throughout the mixture.

Fold in the dried cranberries and pistachios, reserving a small amount of each for garnish. The cranberries add a touch of sweetness, while the pistachios provide a crunchy texture that complements the creamy sweet potatoes.

Transfer the mixture to a serving dish and sprinkle the reserved cranberries and pistachios on top for a beautiful presentation. The vibrant colors and textures make this dish a feast for the eyes as well as the taste buds.
