Unforgettable Seafood Coconut Curry Recipe

Introduction:

Today, I’m excited to share a unique and mouthwatering dish that I recently discovered during a trip to a small, coastal town. The fresh seafood and vibrant flavors inspired me to create my own version of a Seafood Coconut Curry that is truly unforgettable.

Ingredients:

  • 400ml coconut milk
  • 200g shrimp, peeled and deveined
  • 150g squid, sliced into rings
  • 150g mussels, cleaned
  • 2 stalks lemongrass, chopped
  • 4 kaffir lime leaves
  • 50g galangal, sliced
  • 2 tbsp Thai red curry paste
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 lime, juiced
  • Fresh cilantro leaves, for garnish

  • wooden spoon
  • ladle

Preparation:

To start, heat a saucepan over medium heat and add the Thai red curry paste. Cook for a minute until fragrant, then pour in the coconut milk. Add the lemongrass, kaffir lime leaves, and galangal, and let the flavors infuse for about 10 minutes.

Next, add the shrimp, squid, and mussels to the coconut milk mixture. Let them simmer gently until the seafood is cooked through. Season the curry with fish sauce, brown sugar, and lime juice to balance the flavors.

Serving:

Once the seafood is cooked and the curry is fragrant, ladle it into bowls and garnish with fresh cilantro leaves. Serve the Seafood Coconut Curry hot with steamed rice or crusty bread to soak up the delicious, flavorful sauce.

Tips:

For an extra burst of flavor, try adding a squeeze of fresh lime juice just before serving. This will enhance the tanginess of the curry and bring out all the complex flavors of the dish.
