Unique Butternut Squash Chorizo Bake

Today’s Unique Dish

Today, I’m excited to share a new recipe that combines the flavors of fall with a twist on a classic comfort food. This dish is perfect for a cozy night in or a special occasion when you want something a little different. Let’s get cooking!

Ingredients:

  • butternut squash (500g, peeled and diced)
  • chorizo sausage (200g, sliced)
  • cannellini beans (1 can, drained and rinsed)
  • maple syrup (2 tbsp)
  • cinnamon (1 tsp)
  • fresh thyme (2 tbsp, chopped)
  • chicken stock (500ml)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon
  • oven

To start, preheat your oven to 200°C. In a large pot, heat some oil over medium heat and add the chorizo sausage slices. Cook until they start to brown and release their delicious flavors. Next, add the diced butternut squash and cook until slightly softened.

Once the butternut squash is tender, add the drained cannellini beans, maple syrup, cinnamon, and chopped thyme to the pot. Stir everything together and pour in the chicken stock. Bring the mixture to a simmer and let it cook for about 15 minutes to let the flavors meld together.

Transfer the mixture to a baking dish and place it in the preheated oven. Bake for 20-25 minutes until the top is golden and bubbly. The aroma filling your kitchen will be absolutely irresistible!

Once out of the oven, let it cool slightly before serving. This dish is best enjoyed warm, with a sprinkle of fresh thyme on top for a pop of color and flavor.

Tips for Perfection

For an extra touch of sweetness, you can sprinkle a bit of brown sugar on top before baking. It adds a caramelized crunch that takes this dish to the next level!

This butternut squash and chorizo bake weighs approximately 1200g in total. It serves 4 and each serving clocks in at around 300 calories. Perfect for a hearty, satisfying meal that won’t weigh you down!
