  • purple sweet potatoes
  • plantain
  • cremini mushrooms
  • coconut milk
  • chicken thighs
  • thyme
  • lime
  • coconut oil
  • ginger

Preparation:

To start, peel and dice the purple sweet potatoes and plantain. Slice the cremini mushrooms and chop the ginger. Season the chicken thighs with salt, pepper, and thyme.

In a skillet, heat coconut oil over medium heat. Brown the chicken thighs on both sides, then remove from the skillet and set aside. In the same skillet, sauté the mushrooms, ginger, and diced sweet potatoes. Once the vegetables are browned, add the coconut milk and lime juice.
