Ingredients:

  • beef brisket (500g)
  • sweet potatoes (500g)
  • kale (200g)
  • coconut milk (1 can)
  • onion
  • garlic (3 cloves)
  • curry powder (2 tsp)
  • salt and pepper

  • large pot
  • wooden spoon

I start by trimming and cutting the beef brisket into bite-sized chunks. In a large pot over medium heat, I brown the beef until it’s nice and crispy. Then, I add chopped onion and garlic, cooking until fragrant. Next, I stir in the curry powder, allowing the flavors to meld together.

After that, I pour in the coconut milk and bring the mixture to a gentle simmer. I let it cook for about an hour, until the beef is tender and the flavors have come together beautifully. In the meantime, I peel and dice the sweet potatoes, adding them to the pot when the beef is almost done.

Once the sweet potatoes are tender, I stir in the kale and let it wilt into the stew. I season with salt and pepper to taste, adjusting as needed. The result is a hearty and flavorful stew that’s perfect for chilly evenings.
