The Perfect Dish for a Cozy Sunday Brunch

As the leaves start to change colors and the weather gets cooler, I find myself craving warm and comforting meals. Today, I’m excited to share a unique recipe that combines the flavors of fall with a touch of sweetness. This dish is perfect for a lazy Sunday brunch with friends or family.

Ingredients:

  • butternut squash (500g)
  • pancetta (100g)
  • goat cheese (150g)
  • dried cranberries (50g)
  • maple syrup (50ml)
  • fresh thyme
  • salt and pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • frying pan

To start, preheat your oven to 400°F (200°C). Peel and dice the butternut squash into small cubes. Toss the squash with olive oil, salt, and pepper, then spread it out on a baking sheet. Roast in the oven for 25-30 minutes, until the squash is tender and slightly caramelized.

While the squash is roasting, cook the pancetta in a frying pan until crispy. Once cooked, remove from the pan and set aside. In the same pan, add the dried cranberries and maple syrup. Cook for a few minutes until the cranberries plump up and the mixture becomes slightly syrupy.

In a large bowl, mix together the roasted butternut squash, crispy pancetta, cranberry-maple mixture, crumbled goat cheese, and fresh thyme leaves. Season with salt and pepper to taste.

Serve the dish warm, garnished with additional fresh thyme leaves. This savory and sweet combination is sure to impress your brunch guests with its unique flavors and textures.
