Today, I’m excited to share a recipe that brings together unexpected ingredients in a delightful dish that will tantalize your taste buds. I love experimenting in the kitchen, and this creation was born out of a desire to push the boundaries of flavor and texture. Join me on this culinary adventure!

Ingredients:

  • purple potatoes (400g)
  • watermelon radish (150g)
  • goat cheese (100g)
  • pistachios (50g)
  • honey (30ml)
  • lemon (1)
  • olive oil (45ml)
  • salt
  • pepper

  • mandoline slicer
  • mixing bowl
  • baking sheet

Start by preheating your oven to 400°F (200°C). Wash and scrub the purple potatoes, then slice them thinly using a mandoline slicer. Repeat the same process with the watermelon radish. In a mixing bowl, toss the sliced potatoes and radish with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for 20-25 minutes, until golden and crispy.

While the potatoes and radish are roasting, prepare the topping. In a small bowl, crumble the goat cheese and chop the pistachios. Zest the lemon over the goat cheese and pistachios, then drizzle with honey and mix everything together.

Once the potatoes and radish are done, remove them from the oven and let them cool slightly. Assemble your dish by arranging the roasted potatoes and radish on a plate, then top with the goat cheese and pistachio mixture. Finish with an extra drizzle of honey and a squeeze of lemon juice.

This unique dish is a perfect combination of earthy flavors from the purple potatoes, peppery crunch from the watermelon radish, creamy tanginess from the goat cheese, and a touch of sweetness from the honey. The pistachios add a lovely nutty texture, while the lemon brightens everything up.
