  • 1 apple
  • goat cheese (50g)
  • handful of fresh mint leaves
  • salt and pepper

Preparation

Start by preheating your oven to 200°C (400°F). Season the lamb meat with salt and pepper, then sear it in a hot frying pan until browned on all sides. Transfer the meat to the oven and roast for about 20 minutes or until cooked to your liking. Remove from the oven and let it rest before slicing.

While the lamb is cooking, cook the quinoa according to package instructions. Once done, fluff it with a fork and set aside. Peel and dice the beetroot and apple. In a food processor, blend the beetroot, apple, and mint leaves until you have a chunky paste.
