Ingredients:

  • salmon fillets (4, 150g each)
  • maple syrup (60ml)
  • soy sauce (30ml)
  • garlic (2 cloves, minced)
  • ginger (1 tbsp, grated)
  • pistachios (50g, chopped)
  • basmati rice (200g)
  • vegetable broth (400ml)
  • green onions (2, sliced)
  • olive oil
  • salt and pepper to taste

To start, preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the maple syrup, soy sauce, minced garlic, and grated ginger. Place the salmon fillets on the baking sheet and brush the maple glaze over the top. Season with salt and pepper before baking in the oven for 12-15 minutes, or until the salmon is cooked through.

While the salmon is baking, prepare the pistachio rice. In a saucepan, heat some olive oil and sauté the basmati rice for a few minutes until lightly toasted.
