Deliciously Unique Pear and Blue Cheese Stuffed Pork Tenderloin

As the fall season is in full swing, I can’t help but be inspired by the bountiful harvest of fresh pears at my local farmer’s market. Today, I’m excited to share my recipe for a mouthwatering pear and blue cheese stuffed pork tenderloin that is sure to impress your family and friends at any gathering.

Ingredients:

  • 1 pork tenderloin (about 500g)
  • 2 ripe pears, peeled and diced
  • 100g of blue cheese, crumbled
  • 50g of walnuts, chopped
  • 2 tablespoons of honey
  • 1 tablespoon of fresh rosemary, chopped
  • Salt and pepper to taste

To begin, preheat your oven to 375°F (190°C). Using a sharp chef’s knife, butterfly the pork tenderloin lengthwise to create a flat surface. Place a sheet of plastic wrap over the meat and pound it with a meat mallet until it is about 1/2 inch thick.

In a bowl, combine the diced pears, crumbled blue cheese, chopped walnuts, honey, and rosemary. Season the mixture with salt and pepper to taste. Spread this delicious filling evenly over the flattened pork tenderloin, leaving a small border around the edges.

Carefully roll the stuffed pork tenderloin up tightly and secure it with kitchen twine at 1 1/2-inch intervals. Place the pork seam side down on a baking sheet lined with parchment paper. Drizzle with a bit more honey on top for a sweet glaze.

Roast the pork tenderloin in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Allow the meat to rest for a few minutes before slicing into 1-inch rounds.
