Today, I’m excited to share with you a unique twist on a classic comfort dish that is perfect for a cozy night in or a special gathering with friends and family.

Ingredients:

  • pumpkin, peeled and diced
  • lamb, cubed
  • apple, chopped
  • blackberries
  • onion, diced
  • garlic, minced
  • beef broth
  • cinnamon
  • nutmeg
  • maple syrup
  • salt and pepper

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon
  • immersion blender

Preparation:

I start by browning the lamb in a large pot over medium heat. Once browned, I add the onion and garlic, cooking until softened. Next, I stir in the pumpkin, apple, blackberries, beef broth, cinnamon, nutmeg, maple syrup, salt, and pepper. I bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes until the pumpkin is tender.

Using an immersion blender, I blend the mixture until smooth and creamy. If you prefer a chunkier texture, you can skip this step. Finally, I adjust the seasoning with salt and pepper to taste.

Serve the warm and comforting pumpkin lamb stew with a sprinkle of fresh parsley on top.

Tips:

For an extra depth of flavor, try roasting the pumpkin in the oven before adding it to the stew. This will bring out a sweet caramelized taste that pairs perfectly with the savory lamb and tart blackberries.
