  • blood oranges (2)
  • pistachios (50g)
  • goat cheese (100g)
  • honey (30ml)
  • olive oil (45ml)
  • fresh mint (a handful)
  • sea salt (to taste)
  • black pepper (to taste)

Preparation

To begin, preheat your oven to 200°C. Start by slicing the purple cauliflower into florets and spread them out on a baking tray. Drizzle with olive oil, season with sea salt and black pepper, and roast in the oven for about 25-30 minutes until tender and slightly caramelized.

While the cauliflower is roasting, prepare the dressing. In a small saucepan, heat honey over low heat until it becomes runny. Remove from heat and whisk in the juice of one blood orange and a splash of olive oil. Set aside.

Peel the remaining blood orange and slice into thin rounds. Roughly chop the pistachios and tear the goat cheese into bite-sized pieces. Pick the leaves from the fresh mint.
