  • purple sweet potatoes (500g)
  • burrata cheese (200g)
  • pomegranate seeds (100g)
  • honey (50g)
  • olive oil
  • sea salt
  • black pepper

Preparation

Start by preheating your oven to 400°F (200°C). Wash the purple sweet potatoes and prick them all over with a fork. Place them on a baking sheet and roast in the oven for about 45-50 minutes, until they are tender.

Once the sweet potatoes are done, carefully remove them from the oven and allow them to cool slightly. Peel off the skin and mash the flesh using a potato masher until smooth. Season with sea salt and black pepper to taste.
