Unique Purple Sweet Potato Soup Recipe

Today, I’m excited to share a unique and flavorful dish that has become a favorite in my household. This recipe combines unusual ingredients to create a dish that is both comforting and exciting to the taste buds. I encourage you to try it out and make it your own!

Ingredients:

  • purple sweet potatoes (500g)
  • kiwano melons (2)
  • coconut milk (200ml)
  • gochujang (50g)
  • black sesame seeds (15g)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • blender

Preparation:

Start by preheating your oven to 400°F (200°C). Wash the purple sweet potatoes and kiwano melons thoroughly. Cut the sweet potatoes into chunks, leaving the skin on for added texture. Scoop out the seeds from the kiwano melons and discard. Place the sweet potato chunks and kiwano melon halves on a baking sheet and roast in the oven for 30 minutes, or until the sweet potatoes are tender.

Once the sweet potatoes are cooked, remove them from the oven and set aside to cool slightly. Scoop the flesh from the kiwano melons and add it to a blender along with the coconut milk and gochujang. Blend until smooth and creamy.

In a large saucepan, heat the kiwano melon and coconut milk mixture over medium heat. Add the roasted sweet potatoes and simmer for another 10 minutes to let the flavors meld together.
Finally, ladle the soup into bowls and garnish with black sesame seeds for a beautiful and nutty crunch.

Tips:

For an extra burst of flavor, try adding a squeeze of fresh lime juice to each bowl before serving. The acidity will enhance the fruity notes of the kiwano melon and balance out the richness of the coconut milk.
