Carefully slice the cauliflower into 1-inch thick “steaks,” leaving the core intact to hold the steaks together. Place the cauliflower steaks on a baking sheet.

In a small bowl, mix together the olive oil, smoked paprika, garlic powder, salt, and black pepper. Brush this mixture onto both sides of the cauliflower steaks, ensuring they are evenly coated. Roast in the oven for 25-30 minutes, or until the cauliflower is tender and golden brown.
