  • Lemon juice (1 lemon)
  • Cinnamon stick (1 stick)
  • Star anise pods (2 pods)

  • fine mesh sieve
  • ice cream maker

Start by combining the chopped plums, sugar, lemon juice, cinnamon stick, and star anise pods in a saucepan over medium heat. Stir gently until the sugar has dissolved and bring the mixture to a gentle simmer. Let the plums soften for about 10 minutes, then remove from heat. Allow the mixture to cool slightly before removing the cinnamon stick and star anise pods.
Next, transfer the mixture to a blender and blend until smooth. Strain the mixture through a fine mesh sieve to remove any remaining skins or lumps.

Chilling and Freezing

Once your plum mixture is strained, transfer it to your ice cream maker and churn according to the manufacturer’s instructions. The sorbet will be ready when it reaches a smooth, frozen consistency.
Transfer the sorbet to a container and freeze for at least 2 hours to allow it to set further.

Serving
