Today’s Unique Recipe: Sweet Potato and Black Bean Enchiladas

As the leaves start to change color and the air becomes crisp, I find myself craving warm and comforting meals like enchiladas. Today, I’m excited to share a unique twist on this classic dish by combining sweet potatoes and black beans for a hearty and flavorful filling. Let’s get cooking!

Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups enchilada sauce
  • 1 package of tortillas
  • 1 cup shredded cheese
  • Fresh cilantro, for garnish

Preparation:

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the diced sweet potatoes on the baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for 20-25 minutes until tender.

In a skillet, sauté the red onion and garlic until softened. Add the black beans, corn, and roasted sweet potatoes to the skillet, and stir to combine. Pour in half of the enchilada sauce and mix well.

Fill each tortilla with a scoop of the sweet potato and black bean mixture, roll it up, and place it seam-side down in a baking dish. Pour the remaining enchilada sauce over the top of the rolled tortillas and sprinkle with shredded cheese.

Bake in the oven for 20-25 minutes until the cheese is melted and bubbly. Garnish with fresh cilantro before serving.

Clever Tip:

For an extra kick of flavor, try adding a sprinkle of smoked paprika to the sweet potato and black bean filling before rolling up the enchiladas. It adds a delicious smoky element that takes this dish to the next level!
