Unique Sweet Potato Goat Cheese Recipe

  • purple sweet potatoes (300g)
  • pistachios (50g)
  • goat cheese (100g)
  • honey (30g)
  • fresh rosemary (10g)

  • baking sheet
  • potato masher
  • chef’s knife
  • oven

To start, preheat your oven to 400°F (200°C). Wash the purple sweet potatoes, then pierce them with a fork all over. Place them on a baking sheet and bake for about 45-50 minutes until they are tender.

While the sweet potatoes are baking, roughly chop the pistachios and finely chop the fresh rosemary. In a small bowl, combine the chopped pistachios, rosemary, and goat cheese.

Once the sweet potatoes are cooked and cooled slightly, carefully slice them in half lengthwise. Using a spoon, scoop out the flesh of the potatoes into a mixing bowl. Mash the sweet potato flesh with a potato masher until smooth.

Next, fill each hollowed-out sweet potato skin with the goat cheese mixture, packing it in tightly. Place the filled sweet potatoes back on the baking sheet and drizzle with honey.

Return the sweet potatoes to the oven and bake for an additional 10-15 minutes until the goat cheese is melted and slightly golden.

Once done, remove the sweet potatoes from the oven and let them cool for a few minutes before serving. Enjoy this unique and delicious dish hot, and savor the creamy goat cheese with the sweet purple potatoes and crunchy pistachios.
