  • cinnamon stick
  • cumin
  • coriander
  • cayenne pepper
  • <li data-ingredient="salt and pepper, to taste

  • olive oil
  • chicken broth

  • roasting pan
  • zester
  • juicer

To start, preheat your oven to 375°F (190°C). In a roasting pan, mix the diced lamb shoulder with the cubed sweet potatoes. Drizzle with olive oil and season with salt, pepper, cumin, coriander, and cayenne pepper. Toss everything together to coat evenly.

Next, add the cinnamon stick to the pan for a warm, fragrant touch. Pour in the chicken broth to keep the meat moist and flavorful during roasting. Place the pan in the oven and let it roast for about 45 minutes, or until the lamb is cooked through and the sweet potatoes are tender.

While the lamb and sweet potatoes are roasting, prepare the pomegranate and orange element of this dish. Extract the seeds from the pomegranate and set them aside. Zest the orange and squeeze out the juice, keeping both ready for the final step.
