Today, I am excited to share a unique and delicious recipe that combines unexpected flavors in a seasonal fusion dish. This recipe was inspired by the changing weather and my love for experimenting with new ingredients. I can’t wait for you to try it!

Ingredients:

  • red quinoa (150g)
  • figs (100g)
  • shrimp (200g)
  • pistachios (50g)
  • fennel bulb (1)
  • blood orange (1)
  • cinnamon
  • honey
  • olive oil
  • salt and pepper

Kitchen Tools:

  • saucepan
  • knife
  • cutting board
  • baking sheet

Begin by cooking the red quinoa according to the package instructions in a saucepan. While the quinoa is cooking, preheat your oven to 400°F (200°C). Slice the figs and fennel bulb, then place them on a baking sheet. Drizzle with olive oil, sprinkle with cinnamon, and roast in the oven for 15-20 minutes until caramelized.

In a separate bowl, toss the shrimp with olive oil, salt, and pepper. Place them on the baking sheet with the roasted figs and fennel, and roast for an additional 10-12 minutes until the shrimp are pink and cooked through.

While the quinoa and shrimp are cooking, prepare the dressing. In a small bowl, whisk together the juice of the blood orange, honey, and a pinch of salt. Once the quinoa is cooked, fluff it with a fork and stir in the dressing.

To assemble the dish, divide the quinoa among serving plates. Top with the roasted figs, fennel, and shrimp. Sprinkle with chopped pistachios for crunch and a burst of color. Drizzle with any remaining dressing and serve immediately.

This dish serves 4 people and each serving weighs approximately 300g. One serving is estimated to be around 350 calories.

Clever Tip:

For an extra flavor boost, try adding a sprinkle of smoked paprika to the shrimp before roasting. It adds a subtle smokiness that pairs perfectly with the sweet figs and tangy blood orange dressing.
