I am excited to share with you today a unique and refreshing dish that is perfect for a hot summer day. This Green Tea Infused Soba Noodles recipe combines the earthy flavors of green tea with the nuttiness of soba noodles, creating a light and satisfying meal that is sure to impress your taste buds.

To start, you will need the following ingredients:

  • 2 green tea bags
  • 200g soba noodles
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 100g edamame beans, shelled
  • 2 tbsp sesame seeds
  • 2 green onions, thinly sliced
  • 200g firm tofu, cubed
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp olive oil
  • to taste
  • to taste

For this recipe, you will need the following kitchen tools:

  • saucepan
  • strainer
  • mixing bowl
  • large pot
  • skillet
  • whisk

Start by bringing water to a boil in a saucepan and steeping the green tea bags for 5 minutes. Remove the tea bags and set aside the green tea.

In a large pot of boiling water, cook the soba noodles according to the package instructions. Once cooked, drain the noodles in a strainer and rinse under cold water to stop the cooking process. Set the noodles aside.

In a mixing bowl, whisk together the soy sauce, rice vinegar, honey, garlic, ginger, olive oil, salt, and pepper to create the dressing. Set the dressing aside.

In a skillet over medium heat, add the cubed tofu and cook until lightly browned on all sides. Add the sesame seeds and continue to cook for another minute.

In a large mixing bowl, combine the cooked soba noodles, cucumber, carrot, edamame beans, green onions, and the cooked tofu mixture. Pour the dressing over the noodle mixture and toss until everything is well coated.

Divide the green tea infused soba noodles into serving bowls and garnish with additional sesame seeds and green onions. Serve chilled and enjoy!

The approximate total weight of the cooked dish is 1200g, with 4 servings at 300g each. One serving is approximately 350 calories.

One unique tip for this dish is to steep the green tea bags in the cooking water for the soba noodles to infuse them with the green tea flavor as they cook.
