Ingredients:

  • Arborio rice (300g)
  • Golden beets (3, peeled and diced)
  • Shallot (1, minced)
  • Garlic cloves (2, minced)
  • Vegetable broth (1 liter)
  • Parmesan cheese (100g, grated)
  • Fresh thyme (1 tablespoon, chopped)
  • Butter (2 tablespoons)
  • Olive oil (2 tablespoons)
  • Salt and pepper (to taste)

To start, sauté the minced shallot and garlic in olive oil over medium heat until fragrant. Add the Arborio rice and cook for a few minutes until the grains are translucent. Next, gradually add the vegetable broth, a ladle at a time, stirring constantly until the liquid is absorbed before adding more.

In a separate saucepan, boil the diced golden beets until they are tender. Once cooked, blend half of the beets into a smooth puree. Add the beet puree to the risotto and continue to cook until the rice is creamy and cooked al dente.

Remove the risotto from heat and stir in the grated Parmesan cheese, chopped thyme, butter, salt, and pepper. Allow the risotto to rest for a few minutes before serving to let the flavors meld together.
