Deliciously Healthy Mushroom & Cauliflower Stir Fry

Ingredients:

  • 1 small head of cauliflower, chopped
  • 200g mushrooms, sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 green onions, chopped
  • 1 tbsp sesame seeds, for garnish

To start, heat a wok over medium-high heat and add the sesame oil. Toss in the minced garlic and grated ginger, stirring constantly until fragrant. Next, add in the sliced mushrooms and cauliflower, stirring occasionally until they start to brown.

Once the veggies are slightly tender, add in the sliced bell pepper and continue to cook for a few more minutes. In a small bowl, mix together the soy sauce, rice vinegar, and honey. Pour this sauce over the veggies in the wok and stir to coat everything evenly.

Let the stir fry simmer for a few minutes to allow the flavors to meld together. Finally, sprinkle the chopped green onions and sesame seeds on top for a burst of freshness and crunch. Your mushroom and cauliflower stir fry is now ready to be served!
