The vibrant colors, exotic spices, and bold flavors of Thai cuisine left a lasting impression on me, and I couldn’t wait to recreate a taste of it at home. This sweet and spicy mango curry chicken dish is a perfect fusion of tropical sweetness and fiery spices, making it a delightful and unexpected addition to any dinner table.

Ingredients:

  • 500g chicken breast, diced
  • 1 large ripe mango, cubed
  • 400ml coconut milk
  • 3 tbsp red curry paste
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • Handful of fresh basil leaves

Kitchen Tools:

To start, heat a large skillet over medium heat and add the red curry paste. Cook for a few minutes until fragrant, then add the diced chicken breast. Stir and cook until the chicken is browned on all sides.

Next, pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine, then add the cubed mango. Let the mixture simmer for about 10-15 minutes, allowing the flavors to meld together and the chicken to cook through.

Once the chicken is cooked, drizzle in the lime juice and tear the fresh basil leaves into the curry. Stir everything together until the basil is wilted and the curry is fragrant and flavorful.

Remove the skillet from the heat and let the curry rest for a few minutes before serving. This dish is best enjoyed hot over a bed of steamed jasmine rice, allowing the sweet and spicy flavors to shine through.
