For this recipe, you’ll need the following ingredients:

  • Arborio rice (200g)
  • Peaches (3, peeled and diced)
  • Saffron threads (1/2 tsp)
  • White wine (100ml)
  • Chicken broth (500ml)
  • Parmesan cheese (50g, grated)
  • Butter (50g)
  • Salt (to taste)
  • Black pepper (to taste)

To create this delicious dish, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • medium saucepan
  • wooden spoon
  • grater

Start by heating the chicken broth in a medium saucepan over low heat. Once warm, add the saffron threads to infuse their flavor into the broth.

In another saucepan, melt the butter over medium heat. Add the Arborio rice and cook for 1-2 minutes until lightly toasted. Pour in the white wine and cook until the liquid is absorbed.

Next, begin adding the warm saffron-infused chicken broth to the rice one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Once the rice reaches the desired consistency, stir in the diced peaches, grated Parmesan cheese, salt, and black pepper. Cook for an additional 2-3 minutes until the peaches are heated through.

Serve the saffron peach risotto hot, garnished with additional Parmesan cheese and a sprinkle of freshly ground black pepper.

This saffron peach risotto weighs approximately 1200g once cooked and serves 4 people. Each serving is around 300g and packs approximately 400 calories.

One clever tip for this recipe is to use ripe peaches for the best flavor. The sweetness of the peaches complements the earthy saffron and creamy risotto perfectly.
