Today, I’m excited to share a recipe that was inspired by a recent trip to a local farmers’ market. I stumbled upon some vibrant purple sweet potatoes and knew I had to create something special with them. The result? A mouthwatering dish that combines the earthy sweetness of the purple sweet potatoes with the savory crunch of toasted quinoa.

Ingredients:

  • 2 medium purple sweet potatoes (500g)
  • 1 cup quinoa (200g)
  • 1 can coconut milk (400ml)
  • 2 tbsp curry powder
  • 1 can chickpeas, drained and rinsed (240g)
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

To begin, preheat your oven to 400°F (200°C). Wash and dry the purple sweet potatoes, then prick them all over with a fork. Place them on a baking sheet and roast in the oven for about 45-50 minutes, or until they are fork-tender.

While the potatoes are roasting, rinse the quinoa in a fine mesh strainer under running water. In a pot, combine the quinoa and coconut milk. Bring to a boil, then reduce to a simmer and cover. Cook for 15-20 minutes, or until all the liquid is absorbed and the quinoa is fluffy.

Once the sweet potatoes are cooked, let them cool slightly before slicing them in half lengthwise. Scoop out the flesh into a mixing bowl, leaving a thin layer to create a shell. Mash the sweet potato flesh with curry powder, salt, pepper, and lime juice.

Stir in the cooked quinoa, chickpeas, and chopped cilantro. Adjust seasoning to taste, adding more salt or lime juice if needed. Stuff the sweet potato shells with the quinoa mixture and return them to the oven for 10-15 minutes to warm through.

Serve the stuffed sweet potatoes hot, garnished with extra cilantro and a drizzle of coconut milk if desired. This dish is perfect for a cozy dinner at home or a unique potluck contribution that will impress everyone with its vibrant colors and flavors.
