Deliciously Unique Potato Salad

As the weather warms up, I find myself craving fresh and vibrant dishes to enjoy in the sunshine. Today, I’m excited to share with you my recipe for a completely unique twist on a classic potato salad.

For this recipe, you will need the following ingredients:

  • 500g baby potatoes
  • 100g pomegranate seeds
  • 150g feta cheese
  • a handful of fresh mint leaves
  • 1 lemon
  • 2 tbsp olive oil
  • to taste
  • to taste

To prepare this dish, you will need the following kitchen tools:

  • saucepan
  • mixing bowl
  • knife
  • cutting board
  • spoon

Start by boiling the baby potatoes in a saucepan until they are fork-tender. Drain and let them cool before cutting them into halves. In a mixing bowl, combine the potatoes with the pomegranate seeds, crumbled feta cheese, and torn mint leaves.

In a small bowl, whisk together the juice of the lemon, olive oil, salt, and pepper. Pour this dressing over the potato mixture and gently toss to ensure everything is coated evenly.

Let the potato salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld together. Just before serving, give it a final toss to ensure everything is well combined.

The approximate total weight of this potato salad is 800g, with around 4 servings. Each serving weighs approximately 200g, and it contains approximately 250 calories per serving.
